High Protein Breakfast Frittata
Ingredients
- 2-3 eggs
- 2 turkey sausages
- 4-5 cherry tomatoes
- ½ small white onion
- 1 bell pepper
- 1 tbsp light mayo
- 1 handful spinach
- 1 hi-fibre wholemeal bagel
- Optional: 1 tsp reduced sugar ketchup
Method
- Preheat your oven to 350°F (175°C).
- Grease a medium-sized oven-safe skillet or baking dish with a little cooking spray or oil.
- Chop the turkey sausages, cherry tomatoes, onion, and bell pepper into small pieces.
- Heat a non-stick skillet over medium heat.
- Add the chopped turkey sausages to the skillet and cook until browned and cooked through.
- Add the chopped onion and bell pepper to the skillet with the turkey sausages and cook until they are softened.
- Toss in the cherry tomatoes and spinach and cook for another 2-3 minutes until the spinach wilts and the tomatoes soften slightly.
- In a mixing bowl, beat the eggs and season with salt and pepper. Pour the beaten egg mixture over the cooked ingredients in the skillet. Make sure the ingredients are evenly distributed in the skillet.
- Let the mixture cook on the stovetop for about 2-3 minutes until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for about 10-15 minutes, or until the frittata is set in the middle and the top is lightly golden brown. Once the frittata is cooked through, remove it from the oven and let it cool slightly.
- Slice the frittata into wedges and serve with the sliced wholemeal bagel on the side.
